By the end of the season I felt confident enough to begin practicing alone in my kitchen back in New York.
I have practiced the craft of making fresh pasta for the past 5 years, serving thousands of people through my company Brooklyn Pasta Lab. We began by serving our local market with fresh pasta kits delivered to clients homes. Nailed a production space. Make plenty of mistakes, and after a long 3 years we have honed into our perfect client avatar. Now we supply restaurants in NYC with premium fresh pasta.
