Are you an aspiring pasta maker looking to learn more about the craft of making handmade pasta?
Before traveling all the way to Italy to learn the craft of making fresh pasta by hand, I was searching for others that were in the same boat. I couldn't find anyone that was as excited about fresh pasta as I was.
In 2017 I traveled to Bologna, Italy to learn the craft of rolling pasta by hand with a mattarello (large Italian rolling pin). It wasn't easy. I understood Italian well enough to comprehend what my teachers were explaining to me but I was terrible at speaking Italian. This small detail made it a lot harder to learn a craft that has so much nuance. Although, every day I woke up at 5am and got my day started with making fresh pasta by hand with my teachers. By the end of the season I felt confident enough to begin practicing alone in my kitchen back in New York.
I have practiced the craft of making fresh pasta for the past 5 years, serving thousands of people through my company Brooklyn Pasta Lab. We supply restaurants in NYC with premium fresh pasta.
Just a few short months ago I launched The Pasta Community which is a private community page that helps young pasta makers (just like I was) accelerate learning the craft of making fresh pasta by hand. Surrounding yourself with other like minded pasta makers from around the world is crutial if you are serious about learning about this dying craft.
